there are two tsujita ramen shops crossed street from each other. Tsujita LA Artisan Noodle has a more elaborate menu and only serves ramen during lunch. tsujita annex serves only ramen throughout the day.
it was super hot in LA that day, so we opted for tsukemen ‘dipping noodle’ dish. it’s great for a hot summer day because many find it more ‘refreshing’ than regular ramen. the noodles are chilled on the side then you dip them in the warm broth (NOT boiling hot) as you eat.
the broth – 60 hours slowly simmered pork bone broth with pork fat. there was even a little sweetness peaking through the rich savory broth from the seafood they used. the spicy sauce also gave much more depth and flavors to the broth.
