Cake from Patisserie Chantilly in Lomita
It was my bday yesterday and pork belly took me to Providence in Hollywood. No.1 spot on Jonathan Gold’s 101 Best Restaurants. The menu consists mainly of seafood. Michael Cimarusti is devoted to sustainable fish and they come from all over the world.
not sure how I felt about the decor and ambience… felt like an old office or a lobby of a museum?
nice touch on personalized menu.
we opted for chef’s tasting menu with wine pairing.
First, out came the Amuse Bouche….
Passion fruit and vodka in a spoon
daikon wrapped main lobster
Smoked oyster, horseradish snow, pickled shallot, dill powder
Scallop sausage with mustard and caramelized onions on buckwheat bilini
wagyu beef cigar
junmai ginjo, hakkaisan, niigata – super super smooth
clams & nasturtium
furmint, samuel tinon, ‘birtok’, tokaji 2014
spot prawn jewels with golden ossetra caviar and finger lime

garganega, suavia, monte carbonare, soave 2014
squid pho – most creative dish of the night. the noodles were made of squid. super delicate but still holds unique texture of the squid. broth was made of wagyu beef, crazy flavorful. left me craving pho for the rest of the night.

Rosa Del Masi- Rosé
A5 Wagyu – w/ side of Elephant Heart Pluot and Spring onion…..I was blown away. crazy marbled, tender, sapid, with a perfect crust. Probably the best piece of beef I’ve ever had and I’ve had authentic Miyazaki Wagyu before.
Their House wine, riesling from Mosel Germany . Super super super delicious, I loved it so much I bought a bottle from the restaurant to take home….. the wine is limited, I’m thinking of going back and buying another bottle.
Artisanal Cheeses – Seasonal accompaniments of a fig and a puree of some sort…..
Ume Sakura – Rhubarb and yogurt
The rhubarb sorbet was served with a meringue infused with cherry blossom leaves.
Kawa-ishi – kinako and black sesame. Kinako is roasted soybean flour, This tastes like a hard chocolate.
They gave us a goodie bag to take home with macarons, and a cupcake. We tried the macarons the next day and they were really good and well made. Probably the best macarons I’ve had in LA….. I haven’t had good macarons for a long time… Speaking of macarons, I work next to Bottega Louie in DTLA, but their macarons are pretty garbage, as well as their coffee and food…
The Le Matcha, perfect Matcha cake with plenty of Matcha flavor. This is a Japanese Style cake, so it’s super light and not too sweet.
I am saving this for a special occasion.
Overall my experience at Providence was excellent. I can see how this place used to have 2 Michelin stars. The environment is like most high-end LA eating establishments, very casual. My most memorable dishes are the wagyu beef, the squid pho, the abalone, and the Kawa-ishi desert is very delicious. The Wine, I love the house wine!!!! I wish they were more accessible.
